Water that has been heated until it turns into a gas. At a volcano, steam rises from anywhere hot water meets hot rock — it's one of the clearest signs the ground underneath is not as quiet as it looks.

The gas phase of water, produced when liquid water reaches 100°C at sea-level pressure (lower at higher altitudes). In volcanic contexts, steam plumes usually come from groundwater contacting heated rock underground; when that groundwater boils explosively against fresh magma, the result is a phreatic eruption — a steam blast that can hurl rock debris without any fresh lava being erupted at all. Phreatic eruptions are particularly dangerous because they offer less warning than magmatic ones.
